In my never-ending quest to make entertaining as stress-free as possible, my new thing is to have these delicious pistachio-orange biscotti around when we have overnight guests.  They are an easy treat to grab, people have something yummy to eat with their morning coffee, and the pressure is off to immediately prepare breakfast.  Make them before guests arrive, and relax!

…a great excuse to eat a cookie in the morning!

Dinner for Four

On Friday night we had friends over for dinner.  I made flank steak marinated in cumin and sumac.  This recipe is so easy, and so good.  The marinade is also used to dress the accompanying arugula and feta salad.  The first time I tried this dish, I didn’t have sumac, so I simply left it out and made extra marinade (I wanted more than called for in the recipe).  It was delicious, but quite lemony, so this time I halved the lemon juice and added the sumac.  The sumac really improved the flavor.  Watermelon is perfect to serve with this.  And for dessert…chocolate cake.

I finally made Ina Garten’s lemon yogurt cake when my mom visited a few weeks ago.  I must say – it is delicious!  The cake can certainly stand on its own as a dessert (or breakfast at my house).  But my mom and I started talking about its versatility.  Of course, using it for strawberry shortcake would be yummy.  Or, you could make a layer cake by slicing it horizontally and covering each layer with homemade flavored frosting.  You could use it in place of traditional pound cake in trifle or drizzle it with a delicious sauce (raspberry comes to mind).  The options are endless, which makes it the perfect cake to have in the freezer for all sorts of occasions, including last-minute guests.
